This Chocolate Hazelnut Spread is a "guilty pleasure" you won't have to feel guilty about. Cacao, one of nature's super-foods, is full of magnesium, calcium and iron as well as tons of antioxidants. Not to mention, the main ingredient, hazelnuts are chocked full of manganese and vitamin E, along with plenty of good fats. So don't feel too bad about enjoying this tasty treat. I like to call it my "not so guilty pleasure"!
1 1/2 Cups dry roasted, unsalted hazelnuts
2 Tbsp Organic coconut nectar
3 Tbsp Organic cacao powder
1 Tsp Organic vanilla
1/4 Cup unsweetened vanilla coconut milk
In a Vitamix (or high powered blender) add all ingredients and blend until you reach a smooth, but thick, consistency.
Transfer to a glass jar and store in refrigerator.
The mixture may be a bit thick when blending. If this is the case, use additional unsweetened vanilla coconut milk, little by little, until you reach your desired consistency. (I used an extra 2 Tbsp to loosen the mixture to my liking).
Makes just over 8.5 oz.
